A Beautiful Birthday Dinner

Last night, as a belated birthday gift for my mom, I made a lovely, healthy dinner for all of us.

Asiago bread with garlic ‘butter’ a la Katy.


Pear and spinach salad with a blueberry vinaigrette (recipe to come!).


And Cannelini, Quinoa, and Peas. Creamy and yummy, as well as super-healthy!

Cannelini, Quinoa, and Peas.

Makes 8 servings.

2 cloves garlic, minced

1 small yellow onion, diced

1 T. olive oil

1 1/4 c. quinoa

14 oz. (1 3/4 c.) vegetable stock

10 oz. (1 1/4 c.) water

1/4 tsp. sea salt

1/4 tsp. dried thyme

1/2 tsp. dried oregano

2 c. spinach leaves

1-15.5 oz. canned cannelini (white kidney) beans, rinsed and drained.

2 c. frozen peas

Heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until softened, 3-4 minutes. Turn the heat to High.

Mix in the quinoa, stock, water and seasonings. Cover and bring to a boil, then lower the heat to Low. Simmer, uncovered, for 7 minutes, stirring occasionally.

Add the beans and peas, and cook 5 more minutes. Add the spinach, and stir until spinach leaves have wilted.

This quinoa is also a good source of Vitamin A, Vitamin K, Folate, Magnesium, and Manganese!
Tonight, I drive back to Madison to prepare for the week and get in a workout. My knee is still bothering me, so I am sticking to yoga, Pilates, and weight lifting until I get the go-ahead from the doctor!

That looks very good though it’s a healthy dish. I really like the flavourings you’ve used.
