Today’s lunch brought quite a bit of COLOR into my life.

Leftover roasted veggies with half a cashew butter & peach butter sourdough sandwich.
In the mix:
From the Farmer’s Market:
- Blue Adirondack potatoes
- Sweet onions
From the Savvy Garden:
- Carrots
- Sungold Cherry Tomatoes
- Green Beans
All topped off with some olive oil, salt, pepper and Cabot Cheddar

Aren’t the purple potatoes gorgeous next to the bright orange carrots and tomatoes?

And regarding the peach butter. I made another batch of peach butter yesterday, but replaced the honey with some regular sugar and white wine. It was good, but not quite as good as the original. You can still find peaches in-season, so make some peach butter while you still can!

This is why I wish I worked at home. The lunch possibilities are endless when you have an oven or stove. It looks so good!
These are reheated leftovers from last night’s dinner. So you could still have roasted veggies for lunch– they reheat amazingly
We just had dinner the other night at a fairly new Italian restaurant in my home town and with my grilled salmon, they served mashed purple potatoes that were to die for…..love the way they look and taste:) Your lunch looks fresh and delicious!

I love it when my lunches have so much color like this! I’m also a little jealous that you have a garden – the most I can manage with city living is fresh herbs but those are fabulous!
