Last night, I attempted to make Bluephies‘ black bean burgers. We ended up with more of a black bean scramble. Oops!
Looking at it now, I think it was my own fault. The recipe calls for leaving 1/2 of the beans whole, and blending the other half with an egg to help the burgers stick together. I didn’t make quite enough black beans, so I didn’t have enough to blend, and so the burgers were not cohesive enough.
However, it was the most delicious cooking fail EVER. The flavor of the peppers and the beans and spices melded together perfectly. As recommended in the cookbook, we topped it with the avocado ranch dressing. Yum!
I will definitely be making this again!
