A Savvy Week: A Pot of Rice

One pot of rice. Forty minutes of Sunday prep. Two recipes ready in under 40 minutes, to carry you through the week.

A Pot of Rice

Monday:  Burrito Bowls
Tuesday: Fried Rice
Wednesday: Burrito Bowls
Thursday: Fried Rice Leftovers

On Sunday:

Cook the pancetta and vegetables for the fried rice.

On Monday:

Prepare burrito bowls as directed, with one exception: instead of 1 cup of rice and 2 cups water, cook 2 cups of rice in 4 cups of water.  That will give you enough leftover rice to make tomorrow’s fried rice.

New Prep Time: 10 minutes (unchanged)
New Cook Time:  45 minutes, to account for the additional rice

On Tuesday:

Cook the eggs as directed in the fried rice recipe with 1/2 teaspoon canola oil (since you are starting from a dry wok instead of using the oil left behind by the pancetta and vegetables).  Add the cooked pancetta, vegetables and leftover rice and cook until heated through.  Stir in the sesame oil and soy sauce before serving.

New Prep Time: 5 minutes
New Cook Time: 35 minutes

On Wednesday:

Use any remaining rice to make another round of burrito bowls.  Alternatively, make something simple like grilled cheese.

On Thursday:

Reheat Tuesday’s leftovers

A busy woman’s meal plan! I like how you’ve broken down the Sunday prep time with the weeknight prep time. Can’t remember making fried rice in years, obviously we have to try it again soon. Looks delicious!
