A Savvy Week: Chicken and Blood Oranges

This week: one chicken + two fennel bulbs + blood oranges = one week of meals.


Chicken and Blood Oranges

Sunday: Roasted Chicken with Mango Tangerine Glaze and Fennel Blood Orange Salad
Monday: Leftovers from Sunday
Tuesday: Risotto with Garlic Kale
Wednesday: Breakfast for Dinner
Thursday: Risotto Leftovers

On Sunday:

Make the chicken and the salad.  Keep the salad dressing on the side so that the leftovers don’t get mushy.  Save the chicken bones, fennel fronds and orange peels!


On Monday:

Make chicken stock while enjoying last night’s leftovers.  Blanch the orange peels, cover and refrigerate so that you can candy them on Thursday.


On Tuesday:

Use the chicken stock from Monday to make risotto. You have at least 18 flavor options!  While the risotto cooks, prepare the garlic kale.


On Wednesday:

Breakfast for Dinner! Pancakes, waffles, eggs: your choice.


On Thursday:

Candy and chocolate dip the orange peels while enjoying risotto leftovers.

    This is a healthy menu preparation for a week. Aside from being healthy, it also saves your money by using the left overs for the next day. Just make sure to refrigerate the leftovers to prevent from contamination.
