Chicken, Take 2

Monday: Coconut Curry Chicken
Tuesday: Coconut Curry Chicken Leftovers
Wednesday: Tomato and Feta Quinoa with a side salad
Thursday: Quinoa leftovers

On Monday:

Prepare the chicken according to recipe instructions and serve with jasmine rice (1 cup rice + 2 cups water, simmered until the water is all absorbed).

On Tuesday:

Enjoy Monday’s leftovers while simmering a pot of homemade chicken stock.

On Wednesday:

Make the tomato and feta quinoa with yesterday’s chicken stock.  Serve with a side salad of choice.

On Thursday:

More leftovers!

    Good portioning, Julie! It takes a lot of planning to be able to use an entire chicken deliciously and in time! Your tomato and feta quinoa looks really yummy.
