A Vegan Breakfast

Yesterday was Blogger Vegan 4 A Day, which is part of the larger Vegan Week organized by Katy and Michelle!  If you are unfamiliar with veganism, check out Caitlin’s post!

In the spirit of the day, I had planned to make a vegan dinner, but studying for my exam took longer than expected.  So instead, I made a vegan breakfast!

PB&J Breakfast Quinoa

IMG_3855Okay, not really PB&J.  More like AB&J, but that just doesn’t have the same ‘ring’ to it, now does it?

Super simple and delicious.  And filling!

  • 1/3 c. quinoa
  • 1/3 c. water
  • 1/3 c. unsweetened vanilla soymilk

Simply mix the quinoa and liquids in a small pot, cover and bring to a boil:

Remove cover, lower heat, and simmer until all the liquid is absorbed.  Top with your toppings of choice.  That’s it!

I’ve mentioned this before, but don’t let this boil over!  Your stove burners will be super sticky if you do.

Unfortunately, I failed at this today.

I’m going to pin it on the fact that between the midnight showing of New Moon and my 8 am meeting this morning, I didn’t get much sleep.

Despite the overflow issue, this turned out just right!

I topped mine with 1 T. raw almond butter + 1 T. strawberry-raspberry preserves. Yum!  And just what I needed today.

Oops.

I realized this morning that breakfast quinoa, one of my standbys, is vegan. As are a lot of the meals I eat.  Now, this doesn’t mean I’m thinking about going vegan, but I have been drinking less cow’s milk and more soy and almond milk.

Just an interesting observation I wouldn’t have thought to make if not for Blogger Vegan 4 A Day!
