I may have jumped the gun a bit with this recipe. This granola, packed as it is with applesauce, cinnamon, nutmeg, allspice and cloves, made my whole kitchen smell like autumn. And with the recent wave of cool weather we’ve been having, it seems to fit my current mood. But, I know that not everyone is ready for fall flavors. That’s okay! Tuck this recipe away in your back pocket and save it for cooler weather.
When you do make it, you’ll have one happy family – this granola is perfect for quick morning breakfasts, served with milk or yogurt, or an easy after school snack. I based it off my nutty granola, but I took out a bunch of the oil and replaced it with applesauce. It does make the end result lower in fat, but my real motivation was the subtle fruity flavor the applesauce would bring. Whatever your reasons, make sure you try this apple spice granola!
Spiced and chock-full of nuts, this granola is perfect for late summer or autumn. Adapted from my nutty granola.
- 3 cups rolled oats
- 3/4 cup unsalted pepitas
- 3/4 cup walnuts
- 1/2 cup sunflower seeds
- 1/4 cup blanched sliced almonds
- 1/2 cup brown sugar
- 1/2 cup unsweetened applesauce
- 3 tablespoons canola oil
- 1 tablespoon honey
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon cardamom
- 1/2 teaspoon salt
- Preheat the oven to 350F. Grease a 11" x 13" baking pan.
- Stir the oats, pepitas, walnuts, sunflower seeds and almonds together in a large bowl.
- Whisk the brown sugar, applesauce, canola oil, honey, spices and salt in a small saucepan. Heat over medium-low, whisking constantly, until the sugar is dissolved and the liquid is beginning to bubble at the edges.
- Pour the applesauce mixture over the dry ingredients and stir well, until all of the oats and nuts are coated. Spread the granola in an even layer in the baking pan.
- Bake the granola at 350F for 40 minutes, stirring the granola every 10 minutes.
- While the granola bakes, line a few wire racks with parchment paper. Spread the cooked granola over the parchment paper to dry and cool. Allow the granola to cool completely before transferring to an airtight container.
