Last week, I took the winner of the Battle of the Spreads, and decided to celebrate its win with a new recipe… Cacao Bliss cookies!
The flavors blend together fabulously in these little pillow-y treats. Coconut, chocolate, and nut butter… what’s not to love?
Bliss-ful Cookies
1/4 c almond butter
1/2 c peanut butter
1/4 c Cacao Bliss
1 egg ( a flax egg would work as well!)
2/3 c sucanat (or brown sugar)
Preheat oven to 350*F and grease a cookie sheet. Mix together all ingredients (you may need to use your hands a bit!), and roll into 1″ balls. Place the balls 2″ apart from each other on the pan, and bake 12-14 minutes, until the tops are crackly and the edges are browned.
Makes 10-12 cookies.

Smart Fitness
On Tuesday, I successfully bike 6 miles in 22 minutes, with no knee/IT band pain. Hooray!
I did most of the strength training I had mentioned, but only did one set of lunges because it was irritating my IT band.
This morning, I did some more weights. I love how strong (but shaky!) I feel after a good lifting session!
Push-ups, 1 set of 15
Chest press, 2 sets of 15 (10 lb)
Dumbbell Shoulder press, 2 sets of 15 (10 lb)
Deadlifts, 1 set of 15 (10 lbs)
Bent over rows, 2 sets of 15 (15 lb)
Ab work
Hopefully I’ll be able to squeeze in some cycling tonight as well!
