			<content:encoded><![CDATA[<p></p><p>I was feeling a bit adventurous at the grocery store the other day, so I picked up a new veggie. I had no idea what I was going to do with it, but it was locally-grown and in season, so I knew I&#8217;d find a way to make it delicious!</p>
<p>So, I introduced my kitchen to&#8230;the <b>Daikon Radish.</b></p>

<p style="text-align: left;">I did a little research on daikon when I got home, and found out that it is typically used in Chinese, Korean, and Japanese dishes. I&#8217;m not a huge radish fan, but these are a little more mild in taste than regular radishes.</p>

<p style="text-align: left;">I kept it simple, and sauteed slices of the veggie in some coconut oil and curry powder, and sprinkled them with unsweetened coconut flakes to finish. It came out crunchy and slightly sweet. The daikon flavor was actually pretty bland, so I think it could be added to just about any recipe that uses a mixture of veggies, as long as you add some other seasoning!</p>
