I'll admit, I licked the spoon at the end. It is good, but let it cool first! ;)

Coconut-cherry is my favorite granola combo - probably the most made granola flavor at my house. I've never tried a peanut butter mix before... but after making Dreena's Super-Charge Me cookies this last week I'm now sold on the fact that you can add nut butters to thing without them being too overwhelming. Thanks for sharing your recipe. Yay for the granola train! I'll definitely be trying your version soon :-)

You could definitely use honey instead of agave/ syrup! I was making this to send to a few vegan friends, and that's the only reason I didn't use honey.

We chose the Piedmont ride because it was one that I knew I could train for without it being above my ability level, and because of all the 'foodie' opportunities throughout the trip -- wine tastings, meals with and made by local families, truffle hunting, and the truffle festival!
