Experimenting With New Veggies

I was feeling a bit adventurous at the grocery store the other day, so I picked up a new veggie. I had no idea what I was going to do with it, but it was locally-grown and in season, so I knew I’d find a way to make it delicious!

So, I introduced my kitchen to…the Daikon Radish.

I did a little research on daikon when I got home, and found out that it is typically used in Chinese, Korean, and Japanese dishes. I’m not a huge radish fan, but these are a little more mild in taste than regular radishes.

I kept it simple, and sauteed slices of the veggie in some coconut oil and curry powder, and sprinkled them with unsweetened coconut flakes to finish. It came out crunchy and slightly sweet. The daikon flavor was actually pretty bland, so I think it could be added to just about any recipe that uses a mixture of veggies, as long as you add some other seasoning!

All in all, I was pretty happy with my vegetable experimentation of the week! Next up? Sunchokes!

Hmmm these may be some veggies I enjoy!! Love the coconut on top – looks so yummy. :)

JUMP BACK – did Jessica just say that she would ENJOYYYYY veggies. I am sitting here stunned.

My new goal for the month is to try a turnip. I’ve never had a turnip but I have heard them referenced at work at least 5 times so far and therefore i think God is sending me a sign. Do you have any experience with turnips?

I know, I consider a veggie recipe a great success if even Jess will try it! ;)

Can’t say I’ve really tried turnips… but maybe that will be the next experiment after sunchokes!

I’ve heard sunchokes are really good; I’m excited to see what you do with them. I tried collard greens recently and LOVED them. :-D

ohhh i have always wondered about those! i am pretty sure the mix of curry + coconut is right up my alley – i am already brainstorming all the other veggies i could try that combo on!
