I’ve been away all weekend, playing board games with our friends Adam and Laura in Virginia, and meeting their adorable new baby girl. On the long car ride, I spent some time browsing Pinterest (don’t worry, Dan was driving!), looking for some recipe inspiration. Here are five of my favorites that I just can’t wait to try!
Main: Healthy Slow-Cooked Tikka Masala from The Wanderlust Kitchen.
This was an obvious choice. I mean, it is one of my favorite Indian dishes, and it is made in the slow cooker. It is like a match made in heaven.
Soup: Thai Coconut Chicken Noodle Soup from Blogging Over Thyme.
I’m really feeling the Thai flavors lately. Coconut milk, lime and cilantro sounds like an awesome base for a chicken noodle soup!
Side Dish: Meyer Lemon Roasted Carrot Strings with Lemon Garlic Sauce from Running to the Kitchen.
Crunchy little carrot strings with a creamy sauce? Yes, please! I may just end up eating these for a snack, too!
Snack: Quinoa Granola Bars from Honestly Yum.
These bars are packed with so much goodness, I don’t even know where to start. Coconut flakes. Dried cherries. Quinoa. Flax seeds. Almonds. Cashews. Can’t wait to try these!
Dessert: Chocolate Whiskey Bundt Cake with Whiskey Caramel Sauce from Love and Olive Oil.
I’ve been looking for a good chocolate bundt cake recipe for awhile now, and this one looks like it will, well, take the cake!
