Good News, Bad News

Bad News:

Finals week has begun. I had my first of two finals today. It did not go well. I hate when I feel like I really know the material, but still struggle on the exam!

Good News:

On the bright side, our Senior Design/Capstone project is all wrapped up and turned in. What a relief! We’ve been working on it all semester.

Bad News:

I have spent a lot of time studying in the past few days, and I’m exhausted!


Good News:

After all that studying, I have deemed tonight ‘Relax Night.’ IE: I made a delicious dinner, and am now watching Law and Order, reading cookbooks, and figuring out how to decorate our new apartment in New York.

Bad News:

I do not make these enchiladas nearly often enough.

Good News:

These enchiladas are absolutely amazing. Yum!

Tonight, I made Bluephies’ Spinach Enchiladas. Creamy and spicy, they are packed full of veggies like peppers and onions. And spinach, of course! In case you’re wondering about the color, I used Red Pepper tortillas instead of the corn or flour tortillas the recipe called for.
One of the other things I like about the Bluephies cookbook is that a lot of the same ingredients are used over and over throughout the book. So rather than buying a bunch of random ingredients that I will only use for one dish, and then trying to figure out what to do with the rest, my grocery list is nice and simple.
Other Good News:

Good news- I deemed last night a relaxation night as well! :)

Bad news- worst exam OF ALL on Monday and I have about 0% energy/motivation right now! lol

Quick question- how are you liking Inner Fire Yoga? I really want to start going next semester but it’s SO far! How do you get there?
