Happy Snow Day!

The unthinkable happened today.

We had a SNOW DAY.

The University of Wisconsin-Madison has had 3 snow days in the past 50 years, if you include today.

Every other school, including the Technical College, is closed? We still have school.

Temperature is below 25 with wind chill? We still have school.

We get 14″ of snow overnight and nobody has shoveled yet? We still have school.

But today?

We didn’t have school.

Never thought I’d have a snow day in college. But today we did. And it was glorious. A lazy, restful day.

Dan ventured out into the snow today, so all of the snow pictures are from him.

We had 17″ of snow, and today was super windy. I think the weather man said there were gusts up to 40 mph?

Snow is so pretty, except for when it is plowed. Then it looks dirty and gross.
In honor of the cold and snowy day, I made some spicy soup for dinner. It was super easy and quick!
Four-Ingredient Spicy Tomato Soup

Ingredients
  • 28-oz can of fire-roasted tomatoes
  • 2 Hungarian wax peppers, cored and de-seeded
  • 2 c. vegetable broth
  • Plain Greek yogurt

Instructions

Preheat oven to 425F. Slice each pepper into quarters, and spread onto baking sheet. Roast for 8 minutes in the oven.

Peel the peppers (careful, they’re hot!) and place the pulp in a blender. Pour the tomatoes and their juice into the blender. Blend 3 minutes, or until smooth.

Pour the puree into a stock pot, along with the vegetable broth. Cook over medium heat until heated through, stirring occasionally.

Top each bowl of soup with two spoonfuls of yogurt, and stir to blend.

That is really all it takes. It took about 10 minutes to make, start to finish.
You could add some seasoning to your’s, but it was pretty spicy as is. If you don’t like spicy food, try using sweet bell peppers and some seasoning instead of the Hungarian wax. We had the Hungarian wax on hand, and I wasn’t about to trek out to the grocery store for bell peppers on a day today! Plus the spiciness was more warming, which was entirely welcome today!

And on a final note, Project Strength is going great so far! I’m loving my yoga classes because they have also been providing me with some strength training, ab work, and even push-ups! I was so incredibly sore after yesterday’s flow/hot yoga combo. In fact, I think I was more sore than I have ever been after a strength training session.
I got in a HIIT bike workout and some push-ups this morning. However, I had a really bad headache afterwards. The past three or four times I’ve done an intense cardio workout, I’ve had a horrible headache that lasts for a few hours after. Does anyone know why this is and/or what I can do to avoid them?

I am so jealous! Not so much that you got a snow day, which, incidentally is amazing, but that you got snow! I miss snow. I want snow now. We got rain today. Lots and lots of cold rain.
And, on a food level, your soup looks so yummy and perfect for a cold day. Have you ever had the tomato soup at Cristos (the Greek restaurant in the old Sydney’s spot)? It’s soooo good.

Yes, I would much prefer snow over cold rain!!

Somehow, I have still never been to Cristos, even though it went in a few years ago! My parents like it, though. :)

Looks like some tasty soup!
Yeah the Milwaukee media hyped the storm and we got some icy snow (slush?) but no blizzard. I guess some folks in the Western counties got a good amount as well. Hope that you guys don’t have to shovel?

Since we’re in an apartment building, we dodge all shoveling responsibilities. Luckily. I don’t want to shovel all 17″!

i love that you go to madison :-D & i was soo freakin happy to get a snow day!! i love thiss snow, it is so beautiful ! i participated in the sledding on lunch trays tradition for sure!

I live in an apartment too so I didn’t have to shovel a driveway… BUT, my car got plowed in! I would have been shoveling it out for an hour if I plow guy hadn’t taken pity on me and helped me get some of the snow behind the car. Chris and I just moved to Madison this past summer, so we’re joking that we bring the snow days with us ;)

Are you drinking enough during/after the workout? I can get really bad headaches if I don’t hydrate enough during and after a workout.

I love snow days, why can’t we get those in the work world too! I agree with others about hydrating to help prevent the headache.
