I have a new friend, and her name is Cuisinart Mini-Prep processor. Here we are on Christmas together:
- 3 c. spinach
- 5 T. olive oil
- 5-6 sundried tomatoes
- 4 cloves garlic, sliced (We like garlic, but you can use less if you’d like!)
- 1/4 c. pepitas (green pumpkin seeds)
- 2 tsp. sea salt
In a frying pan, heat 1 T. of the oil over medium heat. Add the spinach and cook, stirring occasionally, until wilted and bright green.
Place spinach and all remaining ingredients in the food processor. Blend until smooth.
