New Friend, New Recipes

I have a new friend, and her name is Cuisinart Mini-Prep processor. Here we are on Christmas together:

So far, I’ve made hummus, almond butter, and pesto with my little Mini-Prep. Yum.
This pesto is flavorful and simple to make. For those of you who aren’t veggie fans, it doesn’t taste much like spinach at all!
Spinach and Tomato Pesto

Ingredients:

  • 3 c. spinach
  • 5 T. olive oil
  • 5-6 sundried tomatoes
  • 4 cloves garlic, sliced (We like garlic, but you can use less if you’d like!)
  • 1/4 c. pepitas (green pumpkin seeds)
  • 2 tsp. sea salt

Instructions

In a frying pan, heat 1 T. of the oil over medium heat. Add the spinach and cook, stirring occasionally, until wilted and bright green.

Place spinach and all remaining ingredients in the food processor. Blend until smooth.

Serve over your favorite pasta or fish! May I suggest adding a bit of Parmesan?

That pesto sounds great – I’ve never made it with spinach. I couldn’t live without my mini food processor. I love her. Or him. Or it.

I got the same food processor for Christmas! Still haven’t used it yet…pesto sounds like a great first option, though!

oh I LOVE LOVE LOVE mine — I got the food processor/ blender combo for my birthday and its a life saver! http://www.cuisinart.com/products/blenders/bfp-10ch.html

it is smaller (like the mini prep) but I can still make a single pie crust in it…. which is probably a good thing cause 2 crusts means two pies!
