As promised, I bring you the recipe for my Pear & Spinach Salad with a Blueberry Vinaigrette.
This may be my favorite salad. EVER. The healthy crispiness of the spinach and pears, the crunch of the walnuts, the creaminess of the cheese, and the sweetness of the fruit all blend together for a terrific texture and taste. Yum!

Pear & Spinach Salad with a Blueberry Vinaigrette
Makes 10-12 side salads
7 c. spinach
3 medium pears, thinly sliced
1 c. walnuts, chopped
1 c. dried cranberries
3 oz. goat cheese (chevre)
2/3 c. olive oil
1/3 c. balsamic vinegar
1 c. frozen blueberries
In a large bowl, combine the spinach, pears, nuts, cranberries, and chevre.
In a small bowl, smash up the blueberries with a fork. Whisk in the oil and vinegar.
Serve the blueberry dressing over the salad. Enjoy!
