Spicy Humamole

Typically, Dan and I don’t go all-out for Valentine’s Day, since our anniversary is only two weeks before. Well, except for the first year we were dating, when he surprised me with an a cappella show in my dorm!

Usually though, we simply have a nice dinner together, and maybe exchange small gifts.

Until this year. Yesterday, though, I received the Best. Valentine’s. Day. Gift. Ever…

A plane ticket to Ithaca!

I’ll be in New York Friday-Sunday of this week. I’m so excited to see Dan!

Running Update

The Disney Princess Half Marathon is in a mere 25 days! I successfully completed a 7-mile run this past weekend in 1:15:33… not too shabby! A 8-mile run was on the schedule for this coming Friday, but I’ll be on a plane at that time. So instead, I tried to run it today.

My shins were feeling pretty tight, but I figured they would loosen up as I ran some more. By mile 3, though, they were starting to hurt more and more, so I made myself stop at 3.51 miles.

I’m bummed that I wasn’t able to finish my run, but proud of myself for listening to my body. I’d much rather have to reschedule a training one than get an injury right before the big day!

I took some anti-inflammatories, did some serious foam rolling and stretching, and will ice my shins later tonight. Hopefully I’ll be able to try again on Thursday!

I love my dips and spreads, and I think I may have found a new favorite…

Spicy Humamole!

You only need 3 minutes and 3 ingredients, and you’ll have a delicious, hearty dip!


Spicy Humamole

1/2 c. hummus

1 avocado, pit and skin removed

1 tsp. chili powder (or more if you really want it spicy!)

Blend the hummus, avocado, and chili powder together. Sprinkle with additional chili powder, if desired. Serve with veggies, pitas, or crackers. I also plan on having it in a wrap tomorrow!

Mmm that looks good! And I think I have all three ingredients – looks like I’ve found another snack to make it through being snowed in! :) And enjoy your visit with Dan!!!

Yay! Have fun in Ithaca! I would suggest a blogger meet up, but I would hate to take you away from your honey when you only have a few days together!
I never thought of mixing avocado and hummus! Sounds delicious!!

As much as I’d love to meet up, I only have 48 hours with Dan… but soon I will live in Ithaca, so we’ll definitely have a meet up (or a few) then!

That humamole looks good, but I don’t think anything could ever replace my beloved guacamole :) So excited that you get to fly to your (future) home this weekend!!

YAY! That’s wonderful! Have a great trip! Probably very wise that you stopped after 3.51 miles. NOT worth risking an injury — our body has a way of warning us, and when we don’t listen….eep! : ) Good for you!

Humamole – BRILLIANT! I’m upset I didn’t think of that!! Knocks the calories down some…adds more fiber…you’re so good!
