Summer Squash and Pepper Pasta

Okay, let’s be real here.  Sometimes, I just don’t want to cook dinner.  Or I don’t know what to cook for dinner.  And so we end up going with one of my “stand by” meals, like this one.  It requires very little effort (or time!), but packs a lot of flavor.

Not to mention the fact that I don’t even necessarily need to make a side dish with it.  Look, the vegetables are built right in!

Summer Squash and Pepper Pasta

3 tablespoons extra virgin olive oil
1/2 medium onion, chopped (approximately 1 cup)
3 bell peppers, deseeded and chopped
1 large or 2 medium summer squash, chopped (approximately 4 cups)
1 teaspoon ground black pepper
1/2 teaspoon sea salt
3 tablespoons fresh basil leaves

 

 

In a large skillet, heat the olive oil over medium.  Add the onions, bell peppers and squash to the skillet, turning with a spatula so that all the pieces are evenly covered with the hot oil.  Sprinkle with salt, pepper and garlic powder and cook, stirring occasionally, until the onions are translucent and all the vegetables are soft and beginning to caramelize, about 15-20 minutes.

Meanwhile, cook the pasta according to package directions.  When you drain the pasta, be sure to reserve a few tablespoons of the cooking water.

Toss the pasta, reserved cooking water and vegetables together.  Serve topped with fresh basil.

Veggies thrown together with pasta is my go-to ‘don’t know what to cook’ or ‘don’t feel like cooking’ meal. I always have veggies and pasta! :)

I’ve never tried squash with pasta before – will have to remember that for next time.

Exactly…veggies and pasta are staples around here. Definitely try throwing in some squash!

I love the words quick and easy when it comes to recipes. This is perfect for summer evenings and uses ingredients that I always have in the house, so it’s definitely on the menu.
