Thai food to the rescue!

My meal plan for last night called for stuffed acorn squash.  Yum!

Not so yum?  An acorn squash that is dark brown and mushy on the inside.  And smells gross.

Needless to say, I had to come up with another dinner.  I have another acorn squash, but it is being reserved for chili later this week.  It was supposed to be hot chili, but now I’m thinking I’m going to experiment with vegetarian Cincinnati chili.

(I had four squash in my kitchen this weekend.  They were being sold on a really great deal at the Farmer’s Market. As in, 2 for $2!  The two I have left I just bought this weekend, so hopefully they will still be good!)

Luckily, I had 4 bell peppers that were intended for that hot acorn squash chili.  Since I’m making Cinci chili instead, they needed to be used up!

So, I ended up making a Peanut Quinoa & Pepper stir fry:

IMG_3703I would love to share the stir-fry recipe with you, but something about the sauce wasn’t quite right.  Once it is perfected, I’ll share.  Promise. :)

Snacks last night were popcorn and a little chocolate. Followed by some serious stretching.

Breakfast today?  The last of my Green Monster, and a breakfast burrito a la Caitlin.  Though mine isn’t as pretty as her’s.

Bummer about the squash babe! Was that one from the farmer’s market too?

Yeah, but from two weekends ago. It really shouldn’t have gone bad already…

I’m excited too! But sad that it is the last one :(

I love how easy it is to whip up a delicious stir fry when everything else fails! Breakfast burritos look yummy!

mmmmm this looks so yummy…..I am interested in cooking with quinoa and learning new recipes..once you perfect it make sure to share!
