Three Square Meals a Day?

My mom was nice enough to offer to address and mail these for us. Thanks, Mom!

Speaking of parents, mine are in town today! They try to come visit at least once a semester. They got here right around noon, so I was able to squeeze in a trip to the Farmer’s Market with Kelley and Jenny beforehand. It was the last outdoor Farmer’s Market of the year (so sad!), but the indoor one is still pretty good through the holidays!

Please pardon how unbalanced my food looks for the first half of the day. I wasn’t feeling well, so I went with what made me feel best!

IMG_3748Kashi Go-Lean Crunch + Vanilla Soy Milk + Almond Butter. I picked up some vanilla almond milk at Trader Joe’s tonight, which I am excited to try!

Plus, a Green Monster. And some yoga, which made me feel better!

We had breakfast-for-lunch too. I’ve been craving homemade waffles for weeks, so my parents were kind enough to bring their waffle maker with them. I even get to keep it until Christmas, so I’ll be making lots of waffles to freeze for later! ;)

Trader Joe’s Pumpkin Waffle Mix + Pomegranate Arils + Maple Cream. I loved everything about this meal!

1. I got the maple cream from the Farmer’s Market this morning. OMG. It is so smooth, rich, and creamy. Expect to see it in some oats or breakfast quinoa this week. Or on sandwiches! The possibilities are endless.

2. This was my first pomegranate. I managed to extract all of the arils with minimal juice-squirting. I have now discovered that I love pomegranate arils. They are so juicy and tart-sweet, with a little bit of a nutty feel to them. Pomegranates aren’t in season for that long, so try one while they are still good!

3. Pumpkin. Waffle. Mix. Need I say more?

While Dan and my dad headed out on a bike ride, my mom and I went shopping! It was fun to get to chat with my mom about the wedding, the blog, school, family, and everything else. Plus, we got a little Christmas shopping out of the way!

My mom bought me a new book that I am planning to review on the blog: “Zen and the Art of Running.” I can’t wait to read it!

Because my mom and I didn’t have any snacks this afternoon, we were starving by 5:00. Luckily, so were Dan and my dad, since they had just biked 40+ miles. We had a very early dinner. At Bluephies, one of our favorites!

IMG_3753Bread with tomato basil butter. I stuck to one piece, because I knew I had more yummy food heading my way! I love this butter, though, and I am fairly certain the recipe is in my Bluephies cookbook!

For my main course, I chose the enchilada combination platter. Two of their three enchilada varieties are vegetarian!

Side note: One of the reasons I love Bluephie’s, other than the really delicious food, is that they are really good about labeling what on their menu is vegetarian and/or can be made gluten-free. I almost cried when we went there during my misdiagnosed Celiac’s period last year, I was so happy to see gluten-free menus on the item! For those unaware, it is possible to get gluten-free food at a lot of restaurants, but you really have to ask a lot of questions and be super-wary of cross-contamination. For it to be labeled on the menu really puts you at ease, because you know they know what gluten is and how to cook without it!

IMG_3758Spinach enchiladas. I have the recipe for this in the Bluephie’s cookbook too. Which is a good thing, because I love them. And I can make them when we move to New York, and Bluephie’s is a 13+ hour drive away!

IMG_3759Black bean and goat cheese enchiladas. I’ve never had goat cheese in an enchilada, but now I strongly recommend it! It adds a creamy bite to the dish.

It was all served on a tortilla, bean, corn and pepper salad.

I ate about half of my meal. Dan is looking forward to the leftovers!

IMG_3760I had to take a picture of Dan with his meatloaf (which contained Andouille sausage!), because he was so excited to have meat. I’m pretty sure he isn’t going to join me in the go-vegetarian thing. :)

And finally, you can’t go to Bluephie’s without getting dessert. Check out this delicious-ness:

IMG_3762Chocolate chip cookie dough egg rolls. I had half of one. I’m way excited that these are in my cookbook, too! We are actually having these instead of cake at our wedding, so I’ll be able to recreate them on our anniversaries. :)

IMG_3765Oreo ravioli. I had one.

The food is great at Bluephie’s, but in the end, you’re really going for the desserts. Just face it. :)

Lesson learned for the day: I feel much better with many small meals/snacks, versus three big meals. Good to know!

Those save the date cards are cute! Love the picture too eheh

The enchiladas look delicious and those desserts… omg.

Well, during the week I eat small meals + snacks. This is how I feel better. During the weekend I do the 3 big meals thing (with a small snack) and I feel so stuffed. I blame my family and the delicious foods they have available. I don’t mind because it’s only the weekend (and not every weekend fortunately) so it kind of evens out. But I definitely prefer the week in terms of food, I’m much more concentrated on eating healthy and I actually listen to my body.

Everything looks so delicious in this post!
the way I like to eat depends on what’s going on during the day. During the weekend I am more of a grazer/small meal type for sure.
If you could post any of the Bluephis recipes, I would love it. They all look fantastic!

Those desserts look great! I def prefer to have smaller meals throughout the day to regulate my blood sugar-I tend to eat a medium sized breakfast and lunch but don’t like a big meal for dinner… and I definitely have 3-4 snacks every day :) Hope my metabolism stays like this forever… haha ;)

I like to snack throughout the day instead of eating 3 big meals, it works so much better for me.

Bluphies is GREAT!! One of my favorite restaurants by far. And I see you had the eggroll…that thing is amazing. I first tried it at Taste of Madison a couple years back, and was hooked ever since :)

PS. I used to buy that tomato basil butter for special occasions, isn’t is to die for? I don’t know what they put in it but its down-right addicting! I want the recipe…but I heard that Bluphies has a cookbook now?
