Two of My Favorite Things

I turned a kitchen fail into a kitchen WIN tonight! Love when that happens!

I was seriously in need of some fruits and vegetables, so I decided to throw together a Green Monster, one of my favorite go-to foods.

Unfortunately, I had no bananas, ice, or yogurt in the apartment (yep, I need to get groceries!), so it was far too liquidy for me to stomach.

My solution? I combined it with another recent favorite, no-cook oats!

I mixed about 3/4 c. of the Green Monster fail with about 3/4 c. of rolled oats (sorry, didn’t actually mesaure!). I let it sit for about 25 minutes, then topped it with almond butter, Galaxy Granola, and a smattering of chocolate chips.

It looks scary…

But tastes wonderful!

Now I can get the best of both worlds… overnight oats AND a Green Monster in one!

I call it Monster No-Cook Oats. Or Monster Overnight Oats if you do let it refrigerate overnight… I just can’t call it that when I only let it sit for 25 minutes ;)

Oh, and as for the Galaxy Granola? Fantastic. I just received a sample of the Vanilla Almond in the mail, and it tastes like a crumbled up cookie! But it is much healthier than regular store-bought granola.

PS: Like the new placemat from Crate and Barrel, and bowl/spoon from Fitbloggin‘? I do!

Plie squats: 1 set of 15 with 10 lb weights

Bent-over rows: 2 sets of 15 with 15 lb weights

Overhead shoulder press: 2 sets of 15 with 10 lb weights

Chest press: 2 sets of 15 with 10 lb weights

Push-ups: 1 set of 14

Phew!

I’ve been trying really hard to listen to my body lately, and made some important health decisions because of it.

I am all for listening to your body, people push so hard and feel this need to be wonderwoman all the time. It is ok if you can’t run or not eat whatever product. Do what is right for you!

I’ve gotten really good about listening to my body, and my mind is better because of it. Instead of pushing myself because I’m supposed to run a certain amount or lift a certain amount, I feel better if I stop when my body says, or slow it down or whatever.

Love the monster + oats combo! Great idea:)
I definitely listen to my body. I’m training for a half and it’s so close I can taste it. I definitely want to be well-prepared but not overtrain in the process.

wow, what an intriguing combination to put overnight oats and a GM together! i love both of those too, but i’m not gonna lie… that first picture of it looks scaary! but i know it tasted amazing. :D way to go with turning a kitchen fail into a win! those are the best! i’ve been dying to try galaxy granola – gotta get my hands on some!

and i try to listen to my body. sometimes it is very challenging but i try!

The best thing I have done is listen to when my body is full. I no longer stuff myself to the brim and I am much more comfortable this way :)

Ah, great post! I make green smoothie overnight oats too!!! I’m so excited to see someone else making them too (I kinda thought I was weird). YUM!
