What’s for Dinner?

You guys, I’m totally at a loss for dinner tonight.

I know I could come up with something from my well-stocked kitchen. In fact, I usually have 5 or 6 ideas on hand, but today I’m stumped.

So I need your help and suggestions!

Here’s what I have on hand:

  • Black beans
  • Pinto beans
  • Kale
  • Leeks
  • Baby carrots
  • Onions
  • Garlic
  • Frozen spinach
  • Frozen mixed vegetables
  • Frozen broccoli
  • Frozen bell peppers
  • Spaghetti squash
  • Variety of other winter squash
  • Canned tomatoes
  • Rice
  • Quinoa
  • Millet

Make some veggie burgers! If you add quinoa to them, it gives them this amazing crunch. Here is my recipe for them:

But you can do a variation since you dont have scallions with garlic and onion, baby carrots, pinto beans, an egg (or flax egg if you dont have real ones?), salt, pepper, and cumin.

Grill the leeks an some sort of squash. Then sautee onions and the garlic. Add leeks and squash (and beans if you want so protein). Mix in canned tomatoes and dried spices of choice. Serve on top of millet or quinoa. If you do quinoa add some lime juice to the cooking water if you have it.

Now I’m hungry. :-)

Soup! It’s my go-to “throw it in a pot” dish. I can use however many or few ingredients as I want, and with enough seasoning and veg, it turns out tasty and nutritious! Plus it’s wintertime and soup is made for winter!

Holy moly Farmer Julie – that’s a lot of produce to have on hand! Personally, spaghetti squash is too much work for a Wednesday night for me — I need to keep it as simple as possible on hump day! I’d go Mexican with the beans, peppers and rice.

Black Bean burgers! Omigawsh – I made some the other day and added in some extra spicy (jalepenos, sriracha, red pepper flakes) so amazing!! And they were so easy to make.

Giiiirl I would saute your garlic, onions, broccoli, mixed veggies, spinach, kale, and peppers in some evoo, put it on top of some quinoa and dump some beans on top and call it a meal! ;)
